SERVES 4 - 6

INGREDIENTS:

12 Large Jalapenos
3/4 Lb Chorizo, Diced
2/3 Lb Manchego Cheese, Grated
Olive Oil
Salt & Pepper
1 Clove Garlic, Crushed
1/3 C Onion, Diced Small


DIRECTIONS:

1.      Sauté Onion And Garlic In A Bit Of Olive Oil Until Soft And Slightly Carmelized. Add Chorizo And Cook Through. Drain Oil From Chorizo And Add Manchego Cheese, Then Stir Until Well Mixed.

2.      Cut The Top Off The Jalapenos And Remove Seeds And Membrane From Inside.  Gently Fill The Jalapenos With The Chorizo Mixture. Rub The Jalapenos With Olive Oil And Season With Salt & Pepper.

3.       Wrap The Jalapenos Individually With Aluminum Foil And Seal Them Inside.  Grill The Jalapenos On Med-High Heat For About 4-5 Minutes Before
