SERVES 2 - 3

INGREDIENTS:

2 Lbs Rockfish Filet                                       
1 Medium Yellow Onion, Thinly Sliced
1 Yellow & 1 Red Pepper, Thinly Sliced        
28 Oz Can Plum Tomatoes, Seeded And Chopped
1 Cup Extra Virgin Olive Oil                            
2 Tbsp Lemon Juice
1 Cup Fresh Basil, Coarse Chop                          
Zest Of 1 Lemon
¼ C Black Olives, Sliced

 
DIRECTIONS:

1.      Saute Onion & Peppers In Olive Oil For 3-4 Minutes.

2.      Add Tomatoes & Basil And Season With Salt & Pepper. Cook Until Slightly Reduced

3.      Season Rockfish And Place In Pan Over Vegetables.

4.      Cook About 10-12 Minutes Over Medium Heat Until Fish Is Opaque.

5.      Remove Fish From Pan And Reduce Sauce.

Serve Fish With Vegetables, A Squeeze Of Lemon Juice And Olives.
