SERVES 2 - 3

INGREDIENTS:

• A Pinch Of Saffron Threads 
• 2 Cups Broth (Chicken Or Fish)
• 1 Cup Long-Grain White Rice 
• 1/3 Cup Golden Raisins 
• 1 Carrot, Cut In Julienne Strips 
• 1 Tablespoon Unsalted Butter 
• 1/2 Medium Onion, Finely Chopped 
• 1 Cup Toasted Slivered Almonds   

  
METHOD:

1. In a medium saucepan, sauté Rice, Raisins, Carrots & Onion in Butter or Olive Oil, then add Saffron and Rice  and cook for about 2 minutes. 

2. Add hot Broth and bring to a boil. 

3. Reduce heat. Cover and simmer until Rice is tender and liquid is absorbed,  15 to 20 minutes. 

4. Remove cover, fluff with a fork and fold in toasted Almonds.

5. Serve and Enjoy!
