INGREDIENTS:

10 Tomatillos, Husk Removed
½ Onion, Chopped
1/3 C Cilantro, Chopped
2 Cloves Garlic
1 ½ Tsp Ground Cumin
Juice & Zest Of 2 Limes
1 Serrano Pepper (Optional)
Olive  Oil
Salt & Pepper

GARNISH:
1 Tomato, Seeded And Diced
1 Avocado, Diced


DIRECTIONS:

1.      Preheat oven to broil

2.       Wash tomatillos and rub with Olive Oil (and Serrano pepper) and place on baking sheet. Broil until skin is blistered on all sides. Remove from oven and place in bowl covered with plastic. Let cool then remove skin from Tomatillos and slice in half. Remove seeds and skin from Serrano pepper and cut in half.

3.      Put Tomatillos, Serrano, Onion, Garlic, Cumin  & Lime Juice in blender. Add some Olive Oil and Salt & Pepper to taste. Pulse for about 10-15 seconds or to desired consistency.

4.      You can marinate fish in Salsa for about 20-30 minutes then grill or bake.

Top cooked fish with a bit of the cold Salsa and the Tomato and Avocado
