SERVES 4

INGREDIENTS:

4 Leeks Sliced Thin, White Only
2 Qt Fish  Stock
2 Large Idaho Potatoes, Skinned & Diced
½ Lb Bacalao Pices, Desalted
1 Onion, Diced
Smoked Paprika To Taste
Olive Oil
Salt & Pepper


DIRECTIONS:

1.      Sauté Leeks until translucent in a bit of Olive Oil.

2.      Add Fish Stock and bring to a simmer, add Potatoes and let simmer 45 minutes.

3.      Stir in Bacalao pieces. Turn off heat.

4.      Sauté Onions in a bit of Olive Oil until translucent. Add Smoked Paprika and cook about 2 minutes.

Stir Onions into soup and serve immediately.
